How to use Jake’s Gourmet Whiskey Barrel Chunks on your BBQ ‘direct grilling’

Important: If using a charcoal BBQ, always use briquettes as they give a more consistent burn. Never use lump wood charcoal.

Soak a barrel chunk in water or wine for about 1 hour before using. Set up your BBQ as if using in the usual way, with all the vents fully open, so that it is hot and ready to cook on. Place the barrel chunk directly onto the hot coals or lava rocks. Close the lid or hood and wait until you see the smoke escaping. Now place your food on to the cooking grill . Close the lid and cook your food as normal. Try to keep the lid or hood closed as often as possible and only open to turn your food. We feel 1 chunk is sufficient, but if you would like a smokier taste then add 2 barrel chunks. You can cook anything you wish such as your usual BBQ fodder or something a little more exciting!
