Remeber that if you have a bbq with a lid or hood and you only cook the normal way (straight over the hot coals or flames) then you are losing over 90% of the cooking potential that your bbq has. With these chunks we describe the 'indirect' way of cooking on your bbq, which effectively turns it into an outdoor oven, with plenty of smoke to flavour your food, giving the real bbq taste. Like all outdoor cooking, our American friends are way ahead of us with the way the cook outdoors and they have been cooking indirectly for decades, while we still cook in the conventional way here in Britian. You must try this method on your lidded gas or charcaol bbq to open up a new world of bbq'ing flavours.
