An easy homemade guacamole is a fantastic addition to fajitas. Try this simple recipe. Take the flesh of two medium avocados and blend in your food processor with 1 spring onion, a small handful of coriander, a small clove of garlic (remember it's raw), a tablespoon of mild oil (sunflower, veg, rapeseed) and a pinch of salt & pepper.

Takes 2 minutes to make and tastes so great and fresh.
